Preparation method
  • Boil, steam or microwave the broccoli and cauliflower until tender.
  • Rinse under cold water and drain on absorbent paper.
  • Thread the broccoli, cauliflower and cheese onto skewers.
  • Dust with flour, shake off the excess flour and set aside.
  • Sift the dry ingredients into a large bowl and gradually stir in the egg yolk and milk. 
  • Mix to a smooth batter.
  • Whisk the egg whites to soft peaks and gently fold into the batter.
  • Dip the prepared kebabs in the batter and deep-fry in hot oil until lightly browned.
  • Serve the kebabs hot with the yoghurt dip.

  • 3 tbsp chopped walnuts or pecan
  • 2 tsp fresh chives, copped
  • 2 tsp sugar
