Preparation method
  • Combine the milk, cooking cream, grated ginger and orange rind in a heavy-based saucepan and bring to a boil.

  • Let it simmer gently for 2-3 minutes.

  • Remove from heat and strain.

  • Return the mixture to a clean saucepan, stir in the Royal Crème Caramel powder, and return to heat.

  • Bring to a boil and cook for 1 minute, stirring constantly.

  • Pour into four small oven-proof ramekins.

  • Cool to room temperature, then refrigerate for 4 hours, or overnight, until set.

  • Sprinkle the caster sugar evenly over each ramekin and place under a preheated grill for 2-3 minutes, until caramelized.

  • Serve with toffee orange segments and Dream Whip topping.

  • Toffee Orange Segments: Combine the orange juice and caster sugar in a small heavy-based saucepan. Stir over low heat until the sugar is dissolved and then increase the heat and cook until the sauce thickens. Remove from heat and add the orange segments. Cool before serving.

  • 1 orange, peeled and segmented
  • 2 tablespoons caster sugar
  • 1 tablespoon coarsely grated orange rind
  • 1 tablespoon grated fresh ginger
  • 1 cup of milk

  • 1 sachet of Royal Crème Caramel powder
