Stuffed Eggplant Boats with Meat and Cheese

• • Deeply fry the eggplants in vegetable oil until soft. Cut them into halves longitudinally and add some oil to each half. Then roast it in the oven until it’s fully cooked.
  • In a heated skillet, add some olive oil.
  • Fry the onion and add the meat to it. Then, keep stirring the meat until cooked.
  • Add the spices and green coriander to the meat mixture and then remove it from the stove.
  • In the same skillet, add tomatoes and water and season them with salt, black pepper, and sugar. Leave them aside for 15 minutes.
  • In an oven dish, pour the prepared tomato sauce and arrange the eggplant halves above it.
  • Scoop the eggplant flesh with a spoon to stuff the eggplant with the meat filling.
  • Top it with Kraft’s grated cheddar cheese and put the tray into the oven for 15-20 minutes.
  • Serve the eggplant boats with meat and cheese for a flavorful taste unlike any other!
