Chicken Nachos with Cheesy Sour Cream Sauce

Ingredients: 1 tbsp virgin olive oil; Lime wedges and fresh coriander, to garnish; 200 g sour cream; 200 g tortilla crisps with salt; 2 cups chopped cooked chicken meat; ¼ cup finely diced green peppers; 400 g jar Mexican tomato salsa; 1 onion, finely diced; 2 x 50 g Kraft Cheddar Cheese Cans, finely grated

A gathering with friends and family isn’t complete without a tasty snack. Mexican nachos served with a side of delicious creamy dip made from rich cheddar cheese is the perfect addition to every occasion.

Instructions

- Heat oil in a large frying pan, add onion and cook for 5 minutes, over medium heat, until softened.
- Add the salsa, green pepper and chicken to the pan.
- Cook, stirring constantly, until the chicken is hot and the sauce is slightly reduced.
- To make the cheesy sour cream sauce, heat the sour cream gently in a small saucepan, over medium heat.
- Stir in the finely grated Kraft Cheddar Cheese, until melted and smooth.
- Divide the tortilla chips between the four serving dishes.
- Spoon over the over the hot chicken sauce and top with the cheesy sour cream sauce.
- Garnish with the lime wedges and coriander.
