PREPARE THE STUFFING: Put the bread in the oven to crisp a little. In pan with a tbsp. Of butter sauté the onions and celery. Add the thyme and let it cool a little then add the cheese. Add this mixture to the toasted bread then add the stock.
NOW THE CHICKEN:
Season the chicken with salt and pepper and the spices.
Stuff the chicken with some the stuffing but don’t over fill it .
Rub the chicken with one tbsp. Butter .
Put the chicken in baking dish with the remaining onions and carrots and a cup of water.
Bake in a preheated oven at 400 f for the first hour then reduce to 350 unti the chicken is cooked through and golden .
Add more water if needed .
15 minutes before the chicken is done add the broccoli and let it cook the remaining time with the chicken .
Bake the remaining stuffing in the oven till golden and crispy then serve next to the chicken.

- 1 cup celery, chopped

- 1 cup Cubed Kraft block cheese (Kraft blocks 250g)

- 1 cup broccoli cut into big florets
